Top quality Japanese knives made by folding and hammering multi layers of steel to produce the Damascus-type blades. This process of laminating different types of steel adopted by Japanese Samuri Sword makers provides an extremely sharp but flexible and strong blade. Smaller knives have 37 layers of steel whilst larger knives feature 63 layers. Handles are made from Micarta (multi layers of linen and resin) and have a stainless steel inlay, which can be engraved. Recently endorsed by TV chef Heston Blumenthal as his particular favourite knife.
